History

Schlotzsky’s® was founded in 1971 in a small, hole-in-the-wall shop on South Congress in Austin, Texas. Founded on the basis of a single, eight-inch, round sandwich called simply The Original®, Schlotzsky’s® quickly became an innovator in the fast-casual restaurant category by offering customers a unique and modern restaurant setting in which to enjoy affordable, upscale bakery café flavors that keep them coming back.

As we’ve grown, our customers’ tastes have evolved, and so has our menu. The Original® sandwich is still the foundation of our bakery café franchise, but customers can also choose from a variety of other fresh sandwiches, soups, salads, flatbreads, pizzas, and oven-baked pastas. Even with expanded offerings and hundreds of bakery café franchises, our tastes remain true. We only use the highest-quality ingredients to make the world’s best sandwiches.
